Cravings are somehow this annoying little voice in your head constantly nagging your taste buds for a certain flavor. Lately, I am in a struggle with my taste buds to avoid that fresh blueberry cheesecake that my mother used to make, but in the end, sometimes you cannot keep fighting and you have to surrender to your needs. I visited a few places renowned for their cheesecake but none could get near the standard; some were too plain, sugary, too sour, too stiff, and just merely tasteless.
As a child I always watched my mum whip up the most amazing cheesecake that everyone loved and indulged in, it might be a heavy recipe to most but trust me I would be satisfied with two bites of perfection rather than a whole plate of “maybe”s. The recipe is quite simple and easy to follow.
The Perfect CheeseCake Ingredients
- 1 Pack Of Digestive Biscuits (Crushed Till It Resembles Bread Crumbs)
- 1/2 Small Unsalted Butter Finger (Around 70 Grams)
- 500g Cream Cheese (Softened) (You Can Use Philadelphia Or 24 Pieces Of Kiri)
- 300ml Fresh Cream (Lightly Whipped)
- 1 Can Of Extra Thick Cream (170g By Nestle)
- 3 Spoons Of Sour Cream/Labneh
- 1 Pack Of Lemon/Lime Jello (No Need For Sugar Because This Is Your Source Of Sweetness)
- 1 Can Of Blueberry Topping Or Fresh Strawberries (Options To Preference)
The Method
Grease a deep round (base) spring form pan. Crush biscuits until the mixture resembles fine breadcrumbs, add the butter and mix them until combined. Press the mixture over the base of the prepared pan. Bake in the oven until it goes slightly golden (toasting them like that would make the whole difference in the taste). Remove the pan and leave it to cool away from the hands of any little ones or similar acting adults.
Beat the cream cheese, fresh cream, thick cream, labneh, and the jello all together making sure it has really thickened and combined well (if you see the mixture is quite soft you can add a few spoons of powdered whip cream and whisk it till it is thick as needed). Pour the mixture on top of the prepared biscuits smoothen the top and refrigerate it for at least 30 min.
Take your lovely creation out and add the topping of your liking, my personal favorite is either blueberry or fresh strawberries with a light jelly drizzle on top. This cheesecake would make a perfect dessert when you are expecting guests and would leave an impression on all especially if you are whisking your love along with that cream.
