Blossoms everywhere now, I bet most of you are getting stuffy noses and allergies of all sorts. Heavy meals are definitely not preferable as they would just put you off to snooze land at once. I have always enjoyed that little sweet addition to any salad and a savory side would be just perfect next to it. Mind drifted to the islands of Greece and the tasty meat bites that I have enjoyed there, paired with a fresh Waldorf salad would just do it for me.
- 4 Slices Of White Toast Bread (Torn To Pieces)
- 2 Tbsp of Milk
- 1 Clove Of Garlic (Chopped Fine)
- 1/2 An Onion (Chopped Fine)
- 4 Tsp Dried Mint
- 1 1/2 Cups Ground Beef
- 1 1/2 Cups Ground Lamb (If You Prefer You Can Use All Beef For Less Fat)
- 4 eggs
- Salt & Pepper To Taste
Get the bread pieces moistened with the milk in a large bowl, and leave them aside. Take the garlic, then add the onion, mint, salt, and pepper. Process them if you cannot chop them really fine. Add the onion mixture to the bowl with the moist bread, along with the beef, lamb, and eggs. Mix with your hands until thoroughly blended.
Roll the meat into small balls and get your roasting pan ready (you can grill them on a bbq with coal if you please). Line it up with foil, brush it with oil, and put the meatballs in there pressing them lightly so they would not roll off. Grill them for 5 min each side (almost but please check center is not pink). Remove and get ready to make your salad.
Waldorf Salad Ingredients
- Apples (Cored And Quartered)
- A Handful Of Dried Cranberry (Which You Can Replace For Grapes In The Summer)
- 1/2 Tsp Salt
- 1 Tbsp Honey
- 1 Tbsp Dijon Mustard
- Juice Of 1 Lemon
- Shredded Cheddar/Goat Cheese/Blue Cheese (Optional)
Chop your lettuce rough, and add the apples, dried cranberry, and walnuts. Mix the honey, mustard, lemon, and salt in a bowl and drizzle over the mix then toss them well. You can add shredded cheese or any other kind on top if you desire.
What a plate it would come out to be! This would definitely be a different taste for you to savor and enjoy.
